Bønnerne går igennem en meget streng statskontrolleret sortering, inden de bliver pakket. AA er den højeste certificering og top refererer til at kaffen har en ekstra kompleks og stor kopprofil.

Senere høstede bær leveres til møllen, hvor de håndsorteres baseret på farve. De Modne bær behandles i lufttætte omgivelser i en længere periode kølig temperaturer for at sinke fermenteringen. Bærerne lægges derefter på højborde i tykke stakke for at tørre og vendes regelmæssigt for at holde temperaturen i den første uges tørring. Bærerne bliver derefter spredt i tynde lag i de resterende 20 dages tørring. Fugtindholdet reduceres til 10 -12% Tørringen tager typisk 25-30 dage. Kaffen leveres derefter til tørmøllen og opbevares i de tørrede bælg til beskyttelse, indtil de er klar til tørmaling og eksport.

Maguta Estate works across Nyeri and Embu Coun4es in Central Kenya. Comprised of a network of farms and farmer groups throughout the counties, they seek to empower the local communities by improving the quality of the coffees they produce, as well as the methods used in cultivation and processing. They are committed to improving the livelihoods of the local community in each region, through restoration and improvement of farming and processing practices to facilitate higher income for producers including introducing Carbonic Maceration techniques for some of their beans.The total area under coffee cultivation in Kenya is estimated at 160,000 hectares. Plantations make up about one third of the area. However, the largest part of the land is used by smallholder farmers who assign themselves to cooperatives. Normally the coffee is being sold via auctions that take place weekly during harvesting season.
